Essential of Meat cooking workshop

We begin our carnivorous adventure on Erez’s balcony in Matat, overlooking a magnificent panorama to the upper galilee mountains. A glass of vino and aromatic freshly baked bread accompany several seasonal antipasti dishes and we’re ready to get started.

We begin with a tour of Erez’s organic farm, vegetable patches and herb garden as participants experience the outstanding flavours of seasonal vegetables eaten straight from the land and the appetizing aromas of freshly picked heirloom herbs.

The tour ends in the workshop studio, where participants enjoy the cooking demonstration and tastings of various meat dishes prepared by Erez and delivered in his own unique unmediated style. Erez also shares his tips, suggestions and advice regarding meat preparation in the kitchen: what is beef aging, which cuts should be aged and which are best eaten fresh, the effects freezing has on meat, the correct way of cutting meat and more.

The workshop includes dishes such as veal Carpaccio seasoned with oil and scallions, lamb tartar with roasted pistachios and charred aubergines, veal sweetbreads on a skewer, beef fillet tataki served on spinach stew, Galilean mixed grill of chicken hearts, chicken liver and breast marinated in Harrisa sauce, short rib casserole with white beans, fennel and Jerusalem artichokes, lamb and pine nuts stuffed cauliflower and anything else Erez fancies and the season permits.

At the end of each demonstration the dish is served alongside a paired wine from the ‘Golan heights Winery’.

Participants are then invited to enjoy dessert and hot drinks under the pergola; a seasonal crumble, a marzipan kranz cake or homemade Knafe.
